Rice pudding

One of my all time favorites.

3 slightly beaten eggs
2 cups milk
1 1/2 cups cooked rice
1/2 cup sugar
1 tsp. vanilla
ground cinnamon

Mom’s/Granny’s Tips:

If you beat the eggs, then add the sugar and vanilla before adding the milk the eggs blend in better. I put the milk/egg mixture in the pan and then sprinkle in the rice trying to spread it evenly. <3

Combine all ingredients except cinnamon.
Bake 25 minutes at 325 degrees.
Stir, sprinkle with cinnamon.
Bake 20-25 minutes more.

This recipe is easily doubled, tripled etc. Just make sure your pan is big enough! Great for breakfast or dessert! :)
