Lemon Meringue Pie

This is Brent's Grandma Ward's recipe, it makes a very, very yummy pie!!!

Combine in top of double boiler:

3T cornstarch

1 cup + 2 T sugar

Add:

grated rind of lemon

4 T lemon juice

1 T butter

3 egg yolks beaten

Mix well, then add:

1 1/2 c. boiling water very slowly

Cook over hot water until think.

Cool.

Heat

3 egg whites until almost stiff

then add:

6T of sugar

while continuing to heat until stiff

Arrange on the pie cover entire top and bake at 300 degrees for 30 minutes
