Peanut /Coconut Curry Sauce

Ingredients:
1 tablespoon vegetable oil
1 small white onion, finely chopped (about 1/2 cup)
1 clove garlic, finely chopped
1 tablespoon curry powder
1/4 cup white grape juice
1/4 cup creamy (or crunchy) peanut butter
One 13.5-ounce can unsweetened coconut milk
Juice of 1 lime
1 pound frozen or fresh shrimp (or cooked chicken)
1 package of mixed frozen stir fry vegetables (we've tried a couple of varieties)

1. Heat oil over medium heat. Add the onion and garlic and cook until tender but not browned, about 6 minutes. Stir in the curry powder. Add the grape juice, scraping any browned bits from the bottom of the pan. Whisk in the peanut butter until smooth. Add the coconut milk and simmer, stirring, until thickened, about 15 minutes. Remove from the heat and stir in the lime juice.
2. Add the frozen vegetables and return to simmer.
3. Add shrimp and cook until pink.

Serve over rice (we like it with Jasmine).

This is really easy to make and a great dish.
