Ingredients:
1/3 cup white distilled vinegar
1 1/2 Tablespoons granulated sugar
2 tsp tomato paste
5 medium tomatoes
3 medium peaches
1 medium red onion
1 medium jalapeño pepper
1/2 medium red bell pepper
4 garlic cloves minced ( preminced garlic works great)
Half bunch of cilantro
1 tablespoon lime juice
1 tsp salt
1/2 tsp cumin
Directions:
On the stovetop, heat the vinegar, sugar and tomato paste together until the sugar dissolves and the tomato paste has melted completely, then remove from heat.
Clean veggies thoroughly and then peel the onion and the peaches (and remove the pit). We also peeled the tomatoes.
Slice jalepeno in half and carefully remove the seeds (unless you like your salsa super spicy, then you can leave them in).
Dice tomatoes and peaches into bite size pieces. Cut the rest of the veggies into chunks.
Place all veggies, except for tomatoes and peaches, in the food processor. (Onion, jalapeño, bell pepper). Add garlic, cilantro, lime juice, salt (I added a little garlic salt as well) and cumin.
Pulse till now everything is well blended with no giant chunks. Don’t completely purée.
Add this mixture to your diced tomatoes and peaches. Add the vinegar mixture and mix thoroughly. Place in jars and enjoy. This can be refrigerated or frozen. It is sooo good and a recipe I will be making regularly!
