3-4 lbs beef chuck roast
2 cans French onion soup (10.5 oz each)
1 can beef consommé (10.5 oz)
Sandwich rolls/hoagie rolls
Provolone cheese slices
Mayo and horseradish as desired
Instructions:
Place the roast in the slow cooker. Pour the soup and the consommé over top.
Cover and cook on low for eight hours or on high for four hours. The longer it cooks, the more moist and tender it is.
Remove 3 cups of juice from the slow cooker and put into a small sauce pan. Cook on medium until it comes to a boil and then hard simmer for 10 minutes until it reduces by about half.
Shred beef.
Put mayonnaise and horseradish, if desired, on rolls. Place some shredded meat on top of the rolls and cheese on top of the meat. Place in oven at 350° for approximately five minutes or until cheese is melted.
Serve immediately with sauce on the side for dipping.
