This recipe is so easy and uses up all your peach scraps!!!
Don't throw away your peach skins and pits. Simply add them to a pot and add water. Add just enough water to prevent the peach scraps from burning, so approximately to almost covering the peach scraps, but not completely.
Bring to boil. Reduce temp to medium high heat and simmer for 45 minutes.
Strain through a fine strainer and cheesecloth, reserving the liquid and throwing away the scraps.
Measure the liquid.
Add twice (yes, twice!) the amount of sugar as you have liquid. (Ie 3 cups of liquid +6 cups of sugar)
Cook for about 5-8 minutes till sugar is dissolved.
Place glass mason jars in oven at lowest temperature your oven will go. Boil jar tops (flat pieces).
Remove one jar at a time and pour syrup into glass jars, leaving approximately 1 inch at the top. Wipe top of jars clean if necessary and place a jar top on. Screw on the lid tight and leave to eat on a towel on the counter till they cool completely. You should hear the jar pop and seal after not too long. Let cool completely before storing.
Awesome on waffles or whatever you desire!!!
