Spinach and Cheese Manicotti

I looked at a couple of different recipes and mixed and matched to create my own. I even used a Florentine spinach and cheese sauce and the kids devoured it! That always makes it a winner in our house! Plus it was really easy!

1 8oz pkg. manicotti
1 pkg. (I believe they are 10 oz.) frozen chopped spinach
15 oz low fat ricotta
1 egg
1 1/2 cups mozzarella
1/4 cup Parmesan
basil and parsley
salt
pepper
1 jar of spaghetti sauce

Cook manicotti according to pkg. instructions (typically about 7-9 minutes). Drain, rinse with cool water and set aside. Meanwhile, cook spinach in microwave, drain and set aside to let cool a bit. Mix together ricotta, egg, spinach, 1 cup of the mozzarella and the Parmesan. Season with basil, parsley, salt and pepper to taste. Preheat oven to 350 degrees. Spread half of the jar of spaghetti sauce on the bottom of a 9 X 13 pan. Carefully stuff the pasta with the ricotta mixture and place in the pan. Pour the remaining sauce over the manicotti and cover with the remaining mozzarella cheese. Cover the pan with foil and bake for 30 minutes. Remove foil and cook for another 5-10 minutes, until nice and bubbly. Enjoy!
