Honey Butter Cornbread

This recipe is amazing. I might even venture to say that it is the best cornbread I’ve ever tried! It was definitely a hit in our house! (The recipe came from Sarah Kraffty.)

Ingredients:

1 cup sour cream

2 eggs

1/2 cup (1 stick) salted butter; melted

3/4 cup milk

2 boxes Jiffy cornbread mix

Topping:

1/2 cup (1 stick) salted butter; melted

1/2 cup honey

Instructions:

Combine the sour cream and eggs and mix well. Add the melted butter and mix. Add milk and cornbread mixes and mix just until lumpy (don’t over mix!!). Let the batter sit for 3-5 minutes.

Grease a 9x13 inch pan with butter and pour the batter in. Bake at 400 degrees for 25-30 minutes. (25 was perfect in my oven)

In the meantime, melt your final stick of butter and mix the honey into it. When you pull the cornbread out of the oven, pour the honey butter mixture onto it. Serve and enjoy!
